Flour & Corn Tortillas

Ingredients

  • 1 12 cups all-purpose flour
  • 23 cup cornmeal
  • 14 cup vegetable oil
  • Sea Salt, to taste
  • 12 cup water

Preparation

  1. In a bowl, combine flour, cornmeal, oil and salt.
  2. While stirring, pour in half the water until evenly mixed.
  3. Using your hands form into a ball while adding more water, a little at a time, as needed. Knead until dough is smooth.
  4. Cover with plastic wrap and let stand, at room temperature, for 30 minutes.
  5. Divide into small balls; place one ball between two squares of parchment in Tortilla Press. Press down with handle. Repeat with remaining dough balls.
  6. Heat a frying pan or griddle pan over medium-high heat. Fry each tortilla 1 minute per side or until golden.
  7. Stack in a cloth and keep warm in a Steamer. Microwave to reheat, as needed.
