Five Spice-crusted Salmon

Ingredients
1⁄2 tsp Chinese Five Spice Seasoning
1 tbsp chives
1⁄3 cup breadcrumbs
4 (4 oz/115g) salmon fillets
Sea Salt, to taste
Black Pepper, to taste
2 tbsp vegetable oil
Instructions
Combine first 3 ingredients. Season salmon with Sea Salt and Pepper. Press breadcrumb mixture onto both sides of fillets.
Heat frying pan over medium heat; add oil and cook fillets until both sides are golden brown and fish flakes easily with a fork.
