Festive Mini Quesadillas

Turn your holiday gathering into a fiesta with these merry, bite-sized quesadilla appetizers! Get creative with festive shapes using your favourite holiday cookie cutters—they’re not just for cookies anymore! Add a burst of holiday colour as you decorate with Poco Picante Salsa red, white sour cream, and green cilantro!

Ingredients

  • 2 cups grated cheddar cheese
  • 4 white tortillas (10"), divided
  • 14 cup sour cream
  • 14 cup prepared Poco Picante Salsa
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional

Preparation

  1. Divide cheese between 2 tortillas. Top with remaining 2 tortillas.
  2. In batches, cook quesadillas in Sauté Pan over medium heat until golden brown on both sides and cheese has melted.
  3. Using cookie cutters, cut quesadilla into desired shapes. You should get 6–8 shapes per quesadilla.
  4. Top each shape with 1 tsp each salsa and sour cream. Garnish with cilantro, if desired.
