Ingredients

  • 12 cup tahini paste
  • 14 cup water
  • 2 tbsp lemon juice
  • 2 tsp Lemon Dilly Dip Mix
  • 12 English cucumber
  • 4 cups mixed greens
  • 2 cups cooked quinoa
  • 2 cups shredded red cabbage
  • 1 cup julienned carrots
  • 1 recipe prepared Falafels
  • 1 pkg Falafel Mix
  • 12 cup hot water
  • 3 tbsp lemon juice
  • 3 tbsp olive oil

Preparation

  1. For the sauce, purée tahini, water, lemon juice, and dip mix in a blender until smooth.
  2. Using the 4-in-1 Mandoline, slice cucumber into thin ribbons.
  3. Divide cucumber ribbons, mixed greens, quinoa, cabbage and carrots between four bowls. Top each with three falafels. Drizzle with sauce.
