Extraordinary Potato Salad

A backyard potluck favourite!

Ingredients

  • 12 cup plain Greek yogurt
  • 14 cup light mayonnaise
  • 1 tbsp Honey Mustard
  • 1 tsp Lemon Dilly Dip Mix
  • 1 tsp CCB Dip Mix
  • 1 tsp 3 Onion Dip Mix
  • 2 lbs (900 g) mixed coloured baby potatoes

Preparation

  1. Whisk together first six ingredients. Let stand while preparing potatoes.
  2. Wash and cut potatoes in half, and place in Multipurpose Steamer with lid.
  3. Cook on high in microwave for 6–8 minutes. Transfer to salad bowl and allow to cool.
  4. Toss potatoes with Greek yogurt mixture and serve.
