English Muffin Pizzas

We’re throwing a pizza party and the whole family’s invited! English muffin pizzas are a fun, easy way to give new life to leftovers. They’re great for school lunch upgrades—your kids won’t be bringing these back in their lunchboxes, guaranteed—or dinner in a dash, when life gets hectic. Recruit your tiny chefs to help assemble and create their own mini pizza masterpieces!

Ingredients

  • 4 English muffins
  • 8 prepared Italian Meatballs or Classic Meatballs
  • 1 pkg Italian Meatball Seasoning
  • 1 lb (450 g) lean ground beef
  • 1 lb (450 g) lean ground pork
  • 2 eggs
  • 14 cup milk, your choice
  • 14 cup Parmesan cheese, optional
  • 1 egg, beaten
  • 1 pkg Crispy & Crunchy Coating Mix, or 1/2 cup breadcrumbs
  • 2 tbsp Marinara Sauce Mix or Pizza Seasoning
  • 1 lb (450 g) lean ground beef, chicken or turkey
  • 12 cup prepared Rosée Sauce or Marinara Sauce
  • 1 pkg Rosée Sauce Mix
  • 1 12 cups milk, your choice
  • 12 cup tomato paste
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 3 tbsp Marinara Sauce Mix
  • 12 cup grated cheese, your choice

Preparation

  1. Preheat oven to 400° F. Line Sheet Pan with Sheet Pan Liner.
  2. Split muffins and arrange halves, cut side up, on pan. Lightly brush with oil. Bake 4 min, or until muffin halves are just starting to turn golden.
  3. Meanwhile, slice meatballs into quarters.
  4. Spread 1 tbsp sauce over each muffin half and sprinkle each with 1 tbsp cheese. Arrange 4 meatball quarters over each muffin.
  5. Bake 10 min, until cheese is melted and muffins are browned on the edges.

HAWAIIAN: Marinara Sauce, pineapple chunks, and diced, deli ham.

CHICKEN ALFREDO: Alfredo Sauce, leftover shredded chicken, diced mushrooms, and chopped spinach.

Want bacon bits? Lay 4 slices of bacon over Multipurpose Tray in Multipurpose Steamer. Cover and microwave on high 4–5 min, or until crispy. Chop into small pieces to top pizzas.
