Elderflower Sparking Iced Tea

This is a refreshing anytime drink, and if you want to create a celebratory cocktail, switch soda for sparkling white wine. Try other fruit cordials as well.

Ingredients

  • 2 tsp black tea, your choice
  • 1 cup boiling water
  • 2 tbsp elderflower cordial, or fruit cordial of choice
  • ice cubes, to taste
  • soda water, to top up
  • fresh mint sprigs, optional
  • fresh lemon or lime wedges, for garnish, optional

Preparation

  1. Place the tea in a measuring cup. Pour in water and steep for 3 minutes. Strain and allow tea to cool.
  2. Add elderflower cordial to cooled tea.
  3. Divide between two tall glasses containing ice, top up with soda water, and stir.
  4. Add a mint sprig and wedge of lemon or lime, if using.
