Ingredients

  • 1 cup orzo pasta
  • 1 12 cups cherry tomatoes
  • 12 cup crumbled light feta cheese
  • 14 cup sliced kalamata olives
  • 1 recipe prepared El Greco Finishing Sauce, or sauce of your choice
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. In a Multipurpose Pot - 8 cup, cook orzo in plenty of salted boiling water until tender but firm, 10–12 minutes. Drain and set aside.
  2. In a large bowl, toss together orzo, tomatoes, feta, olives, and sauce. Season to taste.
