El Dorado Speedy Tortilla Soup
Ingredients
1 tbsp Poco Picante Salsa Mix
4 cups Vegetable Broth
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
1 can (28 oz/796 ml) low-sodium diced tomatoes
1 can (19 oz /540 ml) black beans, drained and rinsed
1 cup frozen corn
Sea Salt, to taste
Black Pepper, to taste
1 recipe prepared El Dorado Sauce
1⁄2 cup tortilla chips, crumbled
Preparation
In a Multipurpose Pot, combine first 5 ingredients and simmer for 10 minutes. Season with Salt and Pepper.
Top each bowl with a dollop of El Dorado Sauce and tortilla chips.
