Egg Roll Power Bowl

Ingredients

  • 1 cup rice
  • 2 cups water
  • 400 g lean ground pork
  • 1 tbsp Asian Stir Fry Seasoning
  • 4 cups shredded cabbage or coleslaw mix
  • 1 cup matchstick carrots
  • 1 tbsp 3 Onion Dip Mix
  • 1 12 tbsp sesame oil
  • 12 tbsp rice vinegar
  • 2 tsp low-sodium soy sauce
  • 12 cup mayonnaise
  • 2 green onions, sliced on the diagonal
  • hot sauce, optional

Preparation

  1. In a Round or Multipurpose Steamer, add rice and water. Cook on high for 10 min. Set aside.
  2. While rice is cooking, stir-fry ground pork and Asian Stir Fry Seasoning in a Wok 5–7 min.
  3. In a small bowl, combine dressing ingredients and add to pork mixture. Add coleslaw mix and carrots and stir-fry for 5–7 min.
  4. Place rice in 4 serving bowls and top with pork mixture. Garnish each bowl with sliced green onion and hot sauce, if desired. Enjoy!
