Egg Roll Power Bowl
Ingredients
1 cup rice
2 cups water
400 g lean ground pork
1 tbsp Asian Stir Fry Seasoning
4 cups shredded cabbage or coleslaw mix
1 cup matchstick carrots
1 tbsp 3 Onion Dip Mix
1 1⁄2 tbsp sesame oil
1⁄2 tbsp rice vinegar
2 tsp low-sodium soy sauce
1⁄2 cup mayonnaise
2 green onions, sliced on the diagonal
hot sauce, optional
Preparation
In a Round or Multipurpose Steamer, add rice and water. Cook on high for 10 min. Set aside.
While rice is cooking, stir-fry ground pork and Asian Stir Fry Seasoning in a Wok 5–7 min.
In a small bowl, combine dressing ingredients and add to pork mixture. Add coleslaw mix and carrots and stir-fry for 5–7 min.
Place rice in 4 serving bowls and top with pork mixture. Garnish each bowl with sliced green onion and hot sauce, if desired. Enjoy!
