Ingredients

  • 1 egg or 2 egg whites
  • 1 whole wheat English muffin
  • 1 12 tsp prepared Lemon Dilly, 3 Onion, or CCB Dip
  • 3 tbsp Lemon Dilly Dip Mix
  • 1 cup light sour cream
  • 1 cup light mayonnaise
  • 3 tbsp 3 Onion Dip Mix
  • 1 cup sour cream or plain yogurt
  • 1 cup mayonnaise
  • 3 tbsp CCB Dip Mix
  • 1 cup sour cream, or yogurt
  • 1 cup light mayonnaise
  • 1 slice low-fat cheese
  • 1 slice tomato
  • 14 cup baby spinach
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Fry egg in a fry pan over medium heat.
  2. Meanwhile, toast English muffin. Spread one half of toasted English muffin with dip. Top with cheese, tomato, and spinach.
  3. Season egg to taste with salt and pepper; place on top of spinach. Sandwich with muffin top.
