Easy Roasted Red Pepper & Tomato Soup

Warm, bright and inviting, this could be a simple lunch or part of an elegant dinner party. And what can we say; it’s the perfect combo with a grilled cheese sandwich!

Ingredients

  • 1 can (14 oz /398 ml) crushed tomatoes
  • 4 cups Nourish Broth, or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 2 tbsp Roasted Red Pepper Dip Mix
  • Sea Salt, to taste
  • Black Pepper, to taste
  • sour cream for garnish, optional

Preparation

  1. In Multipurpose Pot, whisk together tomatoes, Nourish Broth, and Roasted Red Pepper Dip Mix.
  2. Bring to a simmer for 5 minutes.
  3. Season with Salt and Pepper. If desired, garnish with a dollop of sour cream and serve immediately.
