Easy Roasted Artichoke Hearts

Let’s talk about a little secret that will make your life easier and save you some moolah—canned artichoke hearts! Not only are they super convenient, but they’re also more cost-effective compared to buying fresh. And artichokes aren’t just a pretty face. Heart-healthy, full of fibre, and loaded with vitamins? Check, check, and check!

Ingredients

  • 1 can (14 oz/ 398 ml) quartered artichoke hearts 
  • 2 tbsp olive oil 
  • 1 tbsp Lemon Dilly Dip Mix or Greek Dressing Mix
  • 14 cup Parmesan cheese, optional

Preparation

  1. Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
  2. Drain artichokes and pat dry with paper towel. Arrange on pan.
  3. Drizzle with olive oil and sprinkle with dip mix. Gently toss to coat.
  4. Roast on bottom rack 20 min, or until lightly browned.
  5. If desired, sprinkle with parmesan cheese and roast for an additional 5 min.
