Easy Ratatouille

An easy-to-make version of the classic French stewed vegetable dish. Makes a great side dish or an appetizer spooned onto crostini or crackers.

Ingredients

  • 1 can (14 oz/398 ml) diced tomatoes, drained
  • 2 bell peppers, diced
  • 1 small zucchini, diced
  • 12 eggplant, diced
  • 1 tbsp 3 Onion Dip Mix
  • 1 tbsp Pesto Sauce Mix
  • 2 tbsp olive oil
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Combine first six ingredients in a Multipurpose Steamer.
  2. Microwave, with lid on, for 10 minutes on high.
  3. Drizzle with olive oil and season to taste.
