Ingredients

  • 1 cup chopped fresh cilantro or parsley
  • 1 - 2 tbsp Asian Stir-Fry Seasoning
  • 1 lime
  • 2 tbsp almond or cashew butter
  • 2 tbsp honey
  • 1 lb (450 g) Asian rice noodles
  • 2 bell peppers
  • 2 carrots
  • 12 English cucumber
  • 1 - 2 cups shredded cabbage
  • 1 - 2 tbsp vegetable oil
  • chopped almonds or cashews
  • chopped fresh mint

Preparation

  1. For the dressing, in a blender, whirl cilantro with Asian Stir-Fry Seasoning, lime juice, almond butter, and honey.
  2. Rehydrate noodles in warm water according to package directions.
  3. In a mixing bowl, add peppers, carrots, cucumber, cabbage, and rice noodles. Drizzle with dressing and oil. Toss to mix evenly. (If noodles are sticky, add 1 - 3 tbsp hot water to loosen.)
  4. Divide between bowls and top with almonds and mint.
