Ingredients
1 cup chopped fresh cilantro or parsley
1 - 2 tbsp Asian Stir-Fry Seasoning
1 lime
2 tbsp almond or cashew butter
2 tbsp honey
1 lb (450 g) Asian rice noodles
2 bell peppers
2 carrots
1⁄2 English cucumber
1 - 2 cups shredded cabbage
1 - 2 tbsp vegetable oil
chopped almonds or cashews
chopped fresh mint
Preparation
For the dressing, in a blender, whirl cilantro with Asian Stir-Fry Seasoning, lime juice, almond butter, and honey.
Rehydrate noodles in warm water according to package directions.
In a mixing bowl, add peppers, carrots, cucumber, cabbage, and rice noodles. Drizzle with dressing and oil. Toss to mix evenly. (If noodles are sticky, add 1 - 3 tbsp hot water to loosen.)
Divide between bowls and top with almonds and mint.
