These are delicious tea cookies, infused with the magic of Earl Grey!
Ingredients
1 cup all-purpose flour, plus more for dusting
1 tbsp Earl Grey tea
1⁄4 tsp Sea Salt
1⁄4 tsp vanilla extract
1⁄2 cup unsalted butter, softened
1⁄4 cup icing sugar
1 tbsp finely grated orange or lemon zest, optional
1 tsp water
Preparation
In a food processor, pulse all dry ingredients until tea is pulverized.
Add vanilla extract, butter, sugar, orange or lemon zest, if using, and water. Pulse until a dough starts to come together. Remove the dough onto a piece of wax or parchment paper and form into a log. Wrap the paper around and roll the log smooth. Chill for at least 30 minutes or freeze for later use.
Preheat oven to 375° F (190° C).
Slice the log into approximately 1⁄2’’ discs. Space 1’’ apart on a Sheet Pan lined with a Sheet Pan Liner. Bake until edges are slightly golden, 12–14 minutes.
