Quick, no-bake, nutritious bites! Prepare these tasty protein balls on Sunday for a quick, on-the-go breakfast that’s ready for the whole week!

Ingredients

  • 12 pkg Dulce de Leche Instant Pudding Mix or Chocolate Instant Pudding Mix
  • 1 cup old fashioned rolled oats
  • 2 tbsp chia seeds
  • 1 scoop Power Up Vanilla Protein Blend or Power Up Salted Caramel Protein Blend, optional
  • 12 cup unsweetened nut or seed butter
  • 14 cup maple syrup
  • 2 tbsp coconut oil, melted

Preparation

  1. In a large bowl, combine pudding mix, rolled oats, chia seeds, and protein blend, if using. Stir in nut butter, maple syrup, and coconut oil until evenly combined.
  2. Using 2 tbsp as a guide, roll into balls.
  3. Store in refrigerator up to one week in a sealed container. Top with coconut before serving, if desired.
