Double Chocolate Zucchini Cake

Using zucchini in this recipe is a great way to sneak in veggies, while keeping the cake super moist.

Ingredients
  • 12 cup butter

  • 12 cup vegetable oil

  • 1 34 cups sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 12 cup buttermilk

  • 2 12 cups flour

  • 14 cup cocoa powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 cups grated zucchini

  • 34 cup walnut pieces

  • 23 cup dark chocolate chips

Instructions
  • Preheat oven to 325° F (160° C).

  • Lightly spray a 9" x 13" pan with vegetable oil.

  • Cream together first six ingredients.

  • Sift together flour, cocoa, baking soda and salt, and add to creamed mixture.

  • Fold in zucchini and pour into prepared pan. Sprinkle with walnuts and chocolate chips.

  • Bake for 45 minutes.
