This one is inspired by the uber popular dill pickle bagged salad from Costco® but this recipe is all about you—customize away! Prepping from scratch means you can cater the ingredients to what you and your family want, and you can make your dressing with simple ingredients. Top with sliced Rotisserie Chicken, Lemon Garlic Chicken, tofu, or whatever protein rocks your salad world. Your dinner, your rules.

Ingredients

  • 12 bunch kale
  • 14 small green cabbage
  • 14 small red cabbage
  • 1 large pickle
  • 2 cups cauliflower florets
  • 2 cups chopped romaine lettuce
  • 34 cup prepared Dilly Honey Mustard Dressing
  • 23 cup mayo
  • 2 tbsp Dilly Honey Mustard Dressing Mix
  • 2 tbsp apple cider vinegar
  • 2 tbsp liquid honey
  • Dill pickle juice, optional
  • 12 cup crumbled feta cheese
  • 1 cup croutons, optional

Preparation

  1. Remove stem from kale; discard. Finely chop leaves. Dice green and red cabbage, pickle, and cauliflower. Place in a large bowl. Add lettuce, dressing, and feta.
  2. If using croutons, gently crush until you have a mix of larger and smaller pieces. Add to bowl. Toss to combine.
