Enjoy pillowy eggs stuffed with ham, sweet bell pepper, and a dusting of cheese, chive, and vegetarian bacon (hello, CCB Dip Mix). What takes this over the top is the lush drizzle of hollandaise sauce that’s made in the microwave. Yes, that’s right—the microwave.
Ingredients
1⁄2 small bell pepper
1 slice (1 oz/30 g) Black Forest or honey ham
2 eggs
2 tbsp milk
1 tbsp CCB Dip Mix
1 tbsp prepared Hollandaise Sauce
1⁄2 cup unsalted butter
1 pkg Hollandaise Sauce Mix
1 cup water
Preparation
Dice pepper and ham.
In a small bowl, whisk eggs, milk, and dip mix until frothy. Stir in diced ham and pepper.
Pour into lightly oiled Omelet Maker. Close lid and microwave on high 2–3 min, or until omelet is set.
Loosen omelet with spatula and carefully transfer onto plate. Top with prepared sauce and black pepper, if desired.
