An Indian-inspired twist on a familiar classic.

Ingredients

  • 6 hardboiled eggs, peeled
  • 2 tbsp light mayonnaise
  • 12 tsp Madras Curry Powder

Preparation

  1. Halve eggs lengthwise and carefully remove yolks.
  2. In a bowl, mash yolks with a fork. Blend in mayonnaise, curry powder, and salt until well combined.
  3. Spoon yolk mixture into egg white halves.
