Cucumber Ribbon Salad

Ingredients
2 firm English cucumbers
8 cups mixed greens
1⁄4 cup Sesame Ginger Dressing, or your choice, prepared
2 tbsp Sesame Ginger Dressing Mix
3 tbsp low sodium soy sauce or gluten free soy sauce
1⁄3 cup oil
1⁄2 cup rice vinegar
Preparation
Using a y-peeler, peel cucumber to form ribbons.
Place greens and cucumber ribbons evenly on four plates and drizzle each with 1 tbsp dressing.
