Ingredients

  • 2 firm English cucumbers
  • 8 cups mixed greens
  • 14 cup Sesame Ginger Dressing, or your choice, prepared
  • 2 tbsp Sesame Ginger Dressing Mix
  • 3 tbsp low sodium soy sauce or gluten free soy sauce
  • 13 cup oil
  • 12 cup rice vinegar

Preparation

  1. Using a y-peeler, peel cucumber to form ribbons.
  2. Place greens and cucumber ribbons evenly on four plates and drizzle each with 1 tbsp dressing.
