Cuban Black Bean Soup
A high-fibre vegetarian soup that is simple to make, and simply delicious.
Ingredients
2 cans (19 oz/540 ml) black beans, drained and rinsed
1⁄4 cup olive oil
1⁄4 cup fresh lime juice
1⁄4 cup fresh chopped cilantro
1 tbsp Cuban Seasoning
1 tbsp Jamaican Jerk Seasoning
4 cups Vegetable Broth , prepared
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
Sea Salt, to taste
Black Pepper, to taste
Preparation
Blend all ingredients in food processor.
Simmer in a Multipurpose Pot for 15 minutes and serve.
