Who said meat had to steal the show? Give vegetables their time to shine. Pre-cook the cauli in the microwave to soften it, then crisp it on the grill and lacquer with Béarnaise sauce. It’s a decadently delish way to add more fibre and vitamin C to your meal!
Ingredients
1 head cauliflower
1⁄4 cup unsalted butter
1⁄2 pkg Bearnaise Sauce Mix or Hollandaise Sauce Mix
1⁄2 cup water
Preparation
Preheat grill to medium high heat.
Remove outer leaves and stem from cauliflower, leaving the head intact. Place in Multipurpose Steamer; cover and microwave on high 7–8 min.
Meanwhile, melt butter in Multipurpose Pot—8 Cup over medium-high heat. Remove from heat; whisk in sauce mix. While whisking, slowly add water. Bring to a boil over medium heat, stirring constantly. Reduce heat and simmer until thickened.
Place cauliflower in 9" aluminum foil pie plate. Pour half of the sauce over top.
Place on grill and immediately turn heat down to low. Cook with lid closed 4–5 min. Pour remaining sauce over top and cook with lid closed for additional 4–5 min, until sauce starts to brown.
