Creamy Rice Salad

Ditch the heatwave hassle and put that microwave cookware to work! You can keep your kitchen cool while preparing this awesome summer side dish, perfect for backyard BBQ’s. Swapping half the mayo with Greek yogurt keeps the fat down without sacrificing on any creamy goodness. And don’t be afraid to make the dish your own—there’s no wrong way to do this! Mix and match with your fam’s favourite veggies, or top with hardboiled eggs for a little protein bump.

Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 tbsp Creamy Potato Salad Dressing Mix or Lemon Dilly Dip Mix
  • 14 cup mayonnaise
  • 14 cup plain 2% Greek yogurt
  • 2 green onions
  • 1 English cucumber
  • 2 cups cherry tomatoes

Preparation

  1. In Multipurpose Steamer, combine rice and water. Top with tray; microwave uncovered on high 16–18 min, or until tender.
  2. Meanwhile, in a large bowl, whisk dressing mix with mayonnaise and yogurt. Set aside.
  3. Chop green onions and cucumbers. Slice cherry tomatoes in half.
  4. Add rice and veggies to bowl with dressing; toss to combine. Add toppings, if desired.
