Creamy Rice Salad

Ingredients
  • 1 cup white rice

  • 2 cups water

  • 1 tbsp Creamy Potato Salad Dressing Mix or Lemon Dilly Dip Mix

  • 14 cup mayonnaise

  • 14 cup plain 2% Greek yogurt

  • 2 green onions

  • 1 English cucumber

  • 2 cups cherry tomatoes

Instructions
  • In Multipurpose Steamer, combine rice and water. Top with tray; microwave uncovered on high 16–18 min, or until tender.

  • Meanwhile, in a large bowl, whisk dressing mix with mayonnaise and yogurt. Set aside.

  • Chop green onions and cucumbers. Slice cherry tomatoes in half.

  • Add rice and veggies to bowl with dressing; toss to combine. Add toppings, if desired.
