Ingredients
1 cup white rice
2 cups water
1 tbsp Creamy Potato Salad Dressing Mix or Lemon Dilly Dip Mix
1⁄4 cup mayonnaise
1⁄4 cup plain 2% Greek yogurt
2 green onions
1 English cucumber
2 cups cherry tomatoes
Instructions
In Multipurpose Steamer, combine rice and water. Top with tray; microwave uncovered on high 16–18 min, or until tender.
Meanwhile, in a large bowl, whisk dressing mix with mayonnaise and yogurt. Set aside.
Chop green onions and cucumbers. Slice cherry tomatoes in half.
Add rice and veggies to bowl with dressing; toss to combine. Add toppings, if desired.
