Creamy Polenta

Like mashed potatoes’ cornmeal cousin, this cozy, comforting side dish is perfect to serve up in the winter months. Kid-approved and hassle-free, this creamy polenta dish doesn’t require endless, stovetop stirring. Serve it alongside roasted chicken and sautéed veggies.

Ingredients

  • 1 pkg Creamy Polenta Mix
  • 2 cups water
  • 2 cups milk, divided, your choice
  • 1 tbsp butter

Preparation

  1. In Round Steamer, combine mix, water, and 1 cup milk. Cover and microwave on high 5 min.
  2. Remove from microwave (use caution when handling steamer—it will be hot!) and whisk well to break up lumps. Whisk in remaining 1 cup milk and butter.
  3. Microwave, uncovered, on high 10 min, whisking halfway through. Let stand in microwave 5 min. Whisk before serving.

Tips

No Steamer? Make polenta on the stovetop! In a large pot over medium heat, combine mix, 2 cups each water and milk, and 1 tbsp butter. Stir constantly until thickened, about 35–40 min. Whisk before serving.

Have some fun with stir-ins! Try shaved Parmesan cheese, cracked black pepper, herbs like parsley and thyme, sundried tomatoes, black olives, or pesto sauce.
