Cream of Broccoli Soup

Ingredients
  • 2 tsp butter or oil

  • 1 small onion, diced

  • 2 tbsp all-purpose flour or gluten-free flour

  • 4 cups 2% milk, or dairy-free alternative, heated

  • 1 lb (450 g) broccoli, steamed and purĂ©ed

  • 1 tbsp Lemon Dilly Dip Mix, or Epicure dip mix of your choice

Instructions
  • In Multipurpose Pot, melt butter over medium heat, sautĂ© onion until soft, 3 minutes.

  • Stir in flour, 1 minute.

  • Slowly whisk in milk. Bring to a slow boil whisking constantly, until sauce has thickened.

  • Whisk in broccoli purĂ©e and dip mix. Simmer for 5 more minutes.
