If you don’t already, keep couscous in your pantry for a stress-free side dish to accompany your meals. Couscous is made of semolina flour, think of it as a teeny tiny type of pasta! It’s as easy as boiling water and letting the couscous steam. Customize with the addition of your favourite dressing.
Ingredients
3 cups water
2 cups couscous
1 small English cucumber, diced
1 cup grated carrot
1 recipe prepared Greek Dressing
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
Preparation
Boil water in Multipurpose Pot - 8 cup. Remove from heat and stir in couscous. Cover with lid and let steam 10 minutes. Remove lid, fluff with a fork and cool to room temperature.
Stir cucumber, carrot, cooled couscous and Greek Dressing in a mixing bowl. Serve immediately or chill before serving.
