Country Harvest Soup
Ingredients
2 medium potatoes, chopped
2 medium carrots, sliced
2 tbsp Marinara Sauce Mix
1–28 oz can low-sodium diced tomatoes
2 cups frozen spinach
3 cups water
2 tbsp Ramen Broth Mix
1-19 oz can black beans, drained and rinsed
1-19 oz can lentils, drained and rinsed
1–14 oz can pumpkin puree
1 tbsp extra virgin olive oil
Preparation
In a Round Steamer, add chopped potatoes, sliced carrots, marinara sauce mix, diced tomatoes, and spinach. Microwave on high for 6–8 min.
In a large stockpot, add water and Ramen Broth Mix. Heat until dissolved.
Add beans, lentils, pumpkin puree, and olive oil. Then, add potato and tomato mixture; cook over medium-high heat for an additional 10 min, until thoroughly heated. Enjoy!
