Ingredients

  • 2 medium potatoes, chopped
  • 2 medium carrots, sliced
  • 2 tbsp Marinara Sauce Mix
  • 1–28 oz can low-sodium diced tomatoes
  • 2 cups frozen spinach
  • 3 cups water
  • 2 tbsp Ramen Broth Mix
  • 1-19 oz can black beans, drained and rinsed
  • 1-19 oz can lentils, drained and rinsed
  • 1–14 oz can pumpkin puree
  • 1 tbsp extra virgin olive oil

Preparation

  1. In a Round Steamer, add chopped potatoes, sliced carrots, marinara sauce mix, diced tomatoes, and spinach. Microwave on high for 6–8 min.
  2. In a large stockpot, add water and Ramen Broth Mix. Heat until dissolved.
  3. Add beans, lentils, pumpkin puree, and olive oil. Then, add potato and tomato mixture; cook over medium-high heat for an additional 10 min, until thoroughly heated. Enjoy!
