Cool as a Cucumber Wine Spritzer

Give that blender a whirl—it’s your tool to make chic, summer bevvies. Stay cool with subtle floral flavours and refreshing cucumber sweetness. Make it a mocktail by swapping dry, green grape juice for white wine.

Ingredients

  • 1 English cucumber, divided
  • 2 cups prepared Elderflower Cordial Tea or Pink Lemonade Herbal Tea, chilled
  • 1 cup boiling or cold water
  • 1–2 bags Elderflower Cordial Herbal Tea Blend
  • Ice cubes, optional
  • 14 cup club soda, optional
  • 1 cup boiling water
  • 1 bag Pink Lemonade Herbal Tea Blend
  • 2 cups white wine, your choice
  • 1 lime
  • 1 cup soda water

Preparation

  1. Roughly chop half the cucumber and place in blender with tea and wine. Blend on high 1 min.
  2. Meanwhile, dice remaining cucumber and slice lime into wedges. Set aside.
  3. Slowly pour wine mixture through a sieve into a large pitcher. Use the back of a spoon to press down pulp to get as much liquid through the sieve as possible. Discard pulp.
  4. Stir in soda water, cucumber, and lime. Pour over ice into four glasses.
