Classic Turkey Noodle Soup
This is a simple, comforting soup recipe to use up leftover holiday turkey. If you have a lot of turkey to use up, double, or even triple the recipe. Portion and freeze for an easy meal on a busy day.
Ingredients
6 cups Vegetable Broth or Nourish Broth
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 cup celery, diced
1 cup carrot, diced
1⁄2 cup broken noodles
1 cup cubed, cooked turkey
Sea Salt, to taste
Black Pepper, to taste
Preparation
In a Multipurpose Pot, bring 6 cups prepared broth to a boil over high heat. Reduce heat to medium; stir 1 cup each chopped celery, carrots, cooked turkey, and about 1⁄2 cup broken spaghetti noodles. Partially cover and simmer for 10 min.
