This is a simple, comforting soup recipe to use up leftover holiday turkey. If you have a lot of turkey to use up, double, or even triple the recipe. Portion and freeze for an easy meal on a busy day.

Ingredients

  • 6 cups Vegetable Broth or Nourish Broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 cup celery, diced
  • 1 cup carrot, diced
  • 12 cup broken noodles
  • 1 cup cubed, cooked turkey
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. In a Multipurpose Pot, bring 6 cups prepared broth to a boil over high heat. Reduce heat to medium; stir 1 cup each chopped celery, carrots, cooked turkey, and about 1⁄2 cup broken spaghetti noodles. Partially cover and simmer for 10 min.
