Ingredients

  • 2 English cucumbers
  • 2 bell peppers
  • 12 small red onion
  • 1 pint cherry tomatoes
  • 12 cup pitted Kalamata olives
  • 12 cup crumbled low-fat feta cheese
  • 14 cup Greek Dressing or Balsamic Vinaigrette, prepared
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 tbsp Balsamic Vinaigrette Dressing Mix
  • 34 cup olive oil
  • 14 cup balsamic vinegar
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar

Preparation

  1. Coarsely chop cucumbers, peppers, and onion. Cut tomatoes in half. Place in a large bowl; add olives and cheese.
  2. In a Cruet, combine dressing mix with oil and red wine vinegar. Shake to mix.
  3. Pour dressing over veggies; gently stir to mix. Serve immediately.

Tips
