Ingredients
2 English cucumbers
2 bell peppers
1⁄2 small red onion
1 pint cherry tomatoes
1⁄2 cup pitted Kalamata olives
1⁄2 cup crumbled low-fat feta cheese
1⁄4 cup Greek Dressing or Balsamic Vinaigrette, prepared
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
3 tbsp olive oil
1 tbsp red wine vinegar
Preparation
Coarsely chop cucumbers, peppers, and onion. Cut tomatoes in half. Place in a large bowl; add olives and cheese.
In a Cruet, combine dressing mix with oil and red wine vinegar. Shake to mix.
Pour dressing over veggies; gently stir to mix. Serve immediately.
