Classic Chocolate Mousse

Decadent and velvety-rich — the perfect finish for a fine meal.

Ingredients

  • 3 eggs, separated
  • 2 tsp vanilla extract
  • 3 tbsp strong, cold coffee
  • 12 cup chocolate – your choice, melted
  • 1 tbsp sugar
  • 1 cup whipping cream, whipped to soft peaks

Preparation

  1. Whisk egg yolks with vanilla extract and coffee. Stir into warm chocolate and set aside.
  2. Create meringue by beating egg whites with sugar until soft peaks form.
  3. Using a Corner Spatula, quickly fold whipped cream into chocolate mixture.
  4. Incorporate meringue into chocolate mixture. Pour into individual serving glasses or a large dessert bowl. Chill for 3 hours before serving.
