Chocolate Cupcakes for St. Patrick's
Ingredients
1 cup flour
1⁄2 cup cocoa powder
3⁄4 tsp baking soda
3⁄4 tsp baking powder
1⁄4 tsp salt
3⁄4 cup sugar
1⁄3 cup vegetable oil
1 egg
1 cup buttermilk
1 tsp vanilla
1⁄2 cup boiling water
2 tbsp softened butter
2 1⁄2 cups icing sugar
1 egg
1 tsp vanilla
2 tbsp light cream
Preparation
Preheat oven to 350° F (175° C).
Lightly spray Perfect Portion Muffin Pan with vegetable oil or line with paper cups.
Whisk together first 5 ingredients.
In a small bowl, whisk together sugar, oil, egg, buttermilk and vanilla.
Combine wet and dry ingredients. Using a Corner Spatula, stir in boiling water until batter is smooth.
Scoop into Muffin Pan and bake for 18–20 minutes.
Cream butter with icing sugar. Beat in egg and vanilla, and cream to make spreadable.
