Chocolate Banana Muffins

A delicious way to get kids to eat their fruit-with just enough chocolate, it feels like a treat!

Ingredients
  • 1 12 medium bananas

  • 1 cup sugar

  • 14 cup vegetable oil

  • 1 egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp Cinnamon

  • 1 cup low-fat plain yogurt or low-fat sour cream

  • 14 cup milk chocolate chips

Instructions
  • Preheated oven to 375° F (190° C).

  • Mash bananas with a fork, measuring about 1 1⁄2 cups.

  • Using an electric mixer, beat bananas with sugar, oil, egg and vanilla extract in a large bowl until well mixed.

  • Whisk flour with baking powder, baking soda and Cinnamon in a large bowl. Pour banana mixture overtop. Using a spoon, gently stir together, then stir in yogurt and chocolate chips.

  • Spoon batter into a lightly oiled muffin pan and bake in centre of oven for 15-18 minutes until a cake tester inserted in centre of muffin comes out clean. Let stand 2 minutes, then turn out of pan.
