Chipotle Breakfast Sandwich

Kick up the heat in your breakfast sandwich.

Ingredients

  • 2 eggs
  • 2 tbsp milk
  • 1 tsp 3 Onion Dip Mix
  • 2 whole wheat English muffins
  • 2 slices low-sodium ham
  • 2 tomato slices
  • 2 tbsp Chipotle Aioli, prepared
  • 1 tbsp Chipotle Aioli Mix
  • 1 cup light mayonnaise
  • 1 tsp lemon juice, optional

Preparation

  1. Whisk eggs, milk, and 3 Onion Dip Mix until frothy, then pour into a lightly oiled Omelet Maker.
  2. Close lid and microwave on high for 2–3 minutes.
  3. Loosen omelet with a spatula, cut in half, and place onto English muffin halves with ham, tomato, and a dollop of Chipotle Aioli. Top with other halves of English muffin and serve.
