Chipotle Breakfast Sandwich
Kick up the heat in your breakfast sandwich.
Ingredients
2 eggs
2 tbsp milk
1 tsp 3 Onion Dip Mix
2 whole wheat English muffins
2 slices low-sodium ham
2 tomato slices
2 tbsp Chipotle Aioli, prepared
1 tbsp Chipotle Aioli Mix
1 cup light mayonnaise
1 tsp lemon juice, optional
Preparation
Whisk eggs, milk, and 3 Onion Dip Mix until frothy, then pour into a lightly oiled Omelet Maker.
Close lid and microwave on high for 2–3 minutes.
Loosen omelet with a spatula, cut in half, and place onto English muffin halves with ham, tomato, and a dollop of Chipotle Aioli. Top with other halves of English muffin and serve.
