Chipotle Beef and Guacamole Tortas
In Mexico, Tortas are a popular type of sandwich served on long crusty rolls called bolillos, but large, crusty French rolls work well. These are a spicy, Spanish version of burgers.
Ingredients
1 lb (450 g) lean ground beef
2 garlic cloves, crushed
1 tsp Chipotle Aioli Mix or Chili Seasoning
1 tbsp ketchup
1 tbsp 3 Onion Dip Mix or Toasted Onion
1 tbsp Guacamole Dip Mix or Poco Picante Salsa Mix
Sea Salt, to taste
Black Pepper, to taste
4 large crusty rolls, split in half
1 large beefsteak tomato, sliced
1 cup Guacamole, prepared, divided
2 ripe avocados
3 tbsp Guacamole Dip Mix
lime juice, optional
4 lettuce leaves , optional
Preparation
Combine first 6 ingredients in a large bowl. Season with freshly ground Sea Salt and Black Pepper.
Form into 4 patties, approximately the same size as buns.
Grill patties over medium-high heat, browning both sides. With an instant-read thermometer, ensure a Food Safe internal temperature of 160° F (71° C).
Place patties on bottom halves of rolls. Top each with tomato slices, 1⁄4 cup Guacamole and lettuce, if desired. Place top halves of rolls and serve.
