Chilled Minted Pea Soup
Ingredients
1 tbsp dried mint, or 3 tbsp fresh mint
5 cups Nourish or Vegetable Broth
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
3 tbsp 3 Onion Dip Mix
1 lb (450 g) frozen green peas
Sea Salt, to taste
Black Pepper, to taste
1 cup sour cream – optional
Preparation
Combine first 4 ingredients in a Multipurpose Pot - 8 cup over medium-high heat.
Reduce heat and simmer for 20 minutes. Cool slightly.
Purée in blender or food processor until smooth.
Season to taste with Salt and Pepper. Serve chilled.

Tips
