Chilled Minted Pea Soup

Ingredients

  • 1 tbsp dried mint, or 3 tbsp fresh mint
  • 5 cups Nourish or Vegetable Broth
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 3 tbsp 3 Onion Dip Mix
  • 1 lb (450 g) frozen green peas
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 1 cup sour cream – optional

Preparation

  1. Combine first 4 ingredients in a Multipurpose Pot - 8 cup over medium-high heat.
  2. Reduce heat and simmer for 20 minutes. Cool slightly.
  3. Purée in blender or food processor until smooth.
  4. Season to taste with Salt and Pepper. Serve chilled.
