Chickpea Horiatiki Salad
Horiatiki means “of the village.” It’s the traditional and well-known Greek salad that highlights summer produce such as fresh, juicy tomatoes, crisp cucumber, and crunchy peppers.
Ingredients
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
2 green bell peppers
1 English cucumber
1 large heirloom or field tomato
1 small red onion
2 cans (19 oz/540 ml each) low-sodium chickpeas
1⁄4 cup pitted Kalamata olives
1⁄4 cup crumbled feta cheese
Black Pepper, to taste
Preparation
Using Funnel, add dressing mix, oil, and vinegar to Cruet. Screw on lid; shake to mix. If making ahead, store in fridge up to 1 week.
Chop peppers, cucumber, tomato, and onion. Drain and rinse chickpeas. Place in a large bowl.
Add 1⁄4 cup dressing. Gently toss to mix. Add olives and cheese. Taste; add more dressing, if desired, and season with pepper.
