Chickpea Horiatiki Salad

Horiatiki means “of the village.” It’s the traditional and well-known Greek salad that highlights summer produce such as fresh, juicy tomatoes, crisp cucumber, and crunchy peppers.

Ingredients

  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar
  • 2 green bell peppers
  • 1 English cucumber
  • 1 large heirloom or field tomato
  • 1 small red onion
  • 2 cans (19 oz/540 ml each) low-sodium chickpeas
  • 14 cup pitted Kalamata olives
  • 14 cup crumbled feta cheese
  • Black Pepper, to taste

Preparation

  1. Using Funnel, add dressing mix, oil, and vinegar to Cruet. Screw on lid; shake to mix. If making ahead, store in fridge up to 1 week.
  2. Chop peppers, cucumber, tomato, and onion. Drain and rinse chickpeas. Place in a large bowl.
  3. Add 1⁄4 cup dressing. Gently toss to mix. Add olives and cheese. Taste; add more dressing, if desired, and season with pepper.
