Chicken Zoodle Soup

Ingredients

  • 4 zucchinis
  • 6 cups Nourish Broth or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 lb (450 g) boneless, skinless chicken breasts
  • 2 carrots
  • 1 bell pepper

Preparation

  1. Fit 4-in-1 Mandoline with 6 mm julienne plate. Julienne zucchinis into long thin strips to make zoodles. Set aside.
  2. Cut chicken into small cubes. Chop carrots and pepper.
  3. Place in Multipurpose Steamer.
  4. Cover; microwave on high, 8 min.
  5. Carefully remove from the microwave, stir in zoodles and serve.
  6. Place in Multipurpose Pot.
  7. Bring to a boil. Reduce heat and simmer 10-12 min.
  8. Stir in zoodles and serve.
