Chicken Zoodle Soup

Ingredients
  • 1 12 tsp Vegetable Broth Mix

  • 2 carrots

  • 1 cup boiling water

  • 6 cups Nourish Broth or Vegetable Broth, prepared

  • 1 lb (450 g) boneless, skinless chicken breasts

  • 1 cup boiling water

  • 4 zucchinis

  • 1 12 tsp Nourish Broth Mix

  • 1 bell pepper

Instructions
  • Fit 4-in-1 Mandoline with 6 mm julienne plate. Julienne zucchinis into long thin strips to make zoodles. Set aside.

  • Cut chicken into small cubes. Chop carrots and pepper.

  • Place in Multipurpose Steamer.

  • Cover; microwave on high, 8 min.

  • Carefully remove from the microwave, stir in zoodles and serve.

  • Place in Multipurpose Pot.

  • Bring to a boil. Reduce heat and simmer 10-12 min.

  • Stir in zoodles and serve.
