Chicken Satay

Ingredients

  • 3 boneless, skinless chicken breasts, cut into strips or 1" cubes
  • 1 cup Indonesian Satay (Peanut) Sauce, prepared, divided
  • 1 tbsp peanut oil or vegetable oil
  • 1 tbsp Minced Garlic
  • 1 tbsp Thai Seasoning
  • 1 cup Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 cup chunky peanut butter
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • juice of half a lemon or lime
  • crushed chilies, to taste
  • 12 bamboo skewers, pre-soaked in warm water
  • 2 tsp sesame seeds
  • 1 green onion, thinly sliced

Preparation

  1. Coat chicken in half of Indonesian Satay (Peanut) Sauce. Marinate for 1 hour in refrigerator, or overnight.
  2. Thread marinated chicken on lower half of soaked bamboo skewers. Grill over high heat for 3 or 4 minutes each side.
  3. Sprinkle with sesame seeds and thinly sliced green onions.
  4. Serve with remaining Satay Sauce for dipping.
