Ingredients
3 boneless, skinless chicken breasts, cut into strips or 1" cubes
1 cup Indonesian Satay (Peanut) Sauce, prepared, divided
1 tbsp peanut oil or vegetable oil
1 tbsp Minced Garlic
1 tbsp Thai Seasoning
1 cup Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1 cup chunky peanut butter
1 tbsp brown sugar
2 tbsp soy sauce
1 tbsp sesame oil
juice of half a lemon or lime
crushed chilies, to taste
12 bamboo skewers, pre-soaked in warm water
2 tsp sesame seeds
1 green onion, thinly sliced
Preparation
Coat chicken in half of Indonesian Satay (Peanut) Sauce. Marinate for 1 hour in refrigerator, or overnight.
Thread marinated chicken on lower half of soaked bamboo skewers. Grill over high heat for 3 or 4 minutes each side.
Sprinkle with sesame seeds and thinly sliced green onions.
Serve with remaining Satay Sauce for dipping.
