Chicken & Mandarin Salad
Piled high with crunchy noodles, tender chicken cubes and juicy mandarins tossed in a zesty dressing, this salad is a filling yet refreshing one-bowl meal.
Ingredients
2 boneless, skinless chicken breasts, sliced, or 2 blocks firm tofu
2 tbsp Balsamic Vinaigrette Dressing Mix or Greek Dressing Mix
2 tbsp orange juice
1 tsp Dijon mustard
1⁄4 cup extra virgin olive oil
1 can mandarins, drained
8 cups romaine lettuce, chopped
1 cup matchstick carrots
2 cups bean sprouts
1⁄2 cup sliced almonds
1 cup chow mein noodles or hard-shelled, gluten-free tacos, crumbled
Preparation
In a Round or Multipurpose Steamer, cook chicken or tofu for 4–6 min. Set aside.
In a large bowl, combine dressing ingredients.
Add chicken, mandarins, lettuce, carrots, and bean sprouts to large bowl. Toss until well coated.
Portion into 4 serving bowls; top each bowl with almonds and chow mein noodles. Enjoy!
