Chicken Fajita Nourish Bowl

Ingredients

  • 12 cup uncooked quinoa
  • 1 cup hot water
  • 12 lb (225 g) boneless, skinless chicken breasts
  • 12 each green and yellow pepper
  • 14 small red onion
  • 12 cup canned black beans, drained and rinsed
  • 1 tbsp Fajita Seasoning
  • 2 cups baby spinach

Preparation

  1. Place quinoa and water in Multipurpose Steamer. Cover; microwave 12 min.
  2. Meanwhile, slice chicken into bite-sized pieces. Thinly slice peppers and onion. Drain and rinse 1⁄2 cup beans.
  3. Remove quinoa from steamer and arrange in two serving bowls. Combine chicken, peppers, onion, and seasoning in steamer (don’t rinse). Cover; microwave on high, 4 min, or until chicken is cooked through.
  4. Arrange chicken mixture, beans, and spinach on top of quinoa.
